Chicken Biryani

Ingredients:

  • 800 grams Basmati rice
  • 500 grams boneless chicken or your choice of meat (cut into pieces)
  • 1 packet Matcom Food Biryani masala
  • 2 large onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 1/2 cup yogurt
  • 3 tablespoons ginger-garlic paste
  • 3/4 cup cooking oil
  • 2 tablespoons ghee (clarified butter)
  • 1/4 cup fresh coriander leaves (chopped)
  • 1/4 cup fresh mint leaves (chopped)
  • 2-3 green chilies (sliced)
  • For the Smokey Flavor:
  • 1 small piece of charcoal
  • 1 teaspoon ghee

Step 1: Marinating the Meat

To infuse our biryani with that authentic smokiness, start by marinating your meat. Mix yogurt, Matcom Foods Biryani masala, ginger-garlic paste, green chilies, and a pinch of salt in a bowl. Coat the meat thoroughly and allow it to marinate for at least an hour.

Step 2: Cooking the Rice

In a separate pot, parboil the Basmati rice until it’s about 65% cooked. Drain the rice and set it aside.

Step 3: Layering the Biryani

Now, it’s time to assemble your biryani. In a large, heavy-bottomed pot, start with a layer of marinated meat, followed by a layer of partially cooked rice.
